Clemmie Hooper is a midwife and mother of four daughters who is best known for her instagram account @mother_of_daughters. Clemmie’s account is not just pretty, but challenging and thought-provoking as well (not unlike Clemmie herself!).
I visited Clemmie’s stunning home on a chilly November day and was thrilled when she told me she was making me a warming chicken and chorizo stew. You can find her (OMG so delicious) recipe below!
Chicken and Chorizo Stew

- 130g chorizo, cut into bite-sized chunks
- 2-4 chicken thighs (around 200-400g), chopped
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 rosemary sprigs
- 1 teaspoon smoked paprika
- 1 pinch of saffron
- 2 x 400g tins butter beans, drained
- 400g tin chopped tomatoes
- 600ml chicken stock
- a handful of flat-leaf parsley, roughly chopped
Instructions
In a large cast iron pot, fry the onion in the olive oil over a medium heat.
Stir in the saffron and paprika.
Add the chicken and chorizo and let and cook until the chicken is cooked through.
Add the garlic and rosemary and let cook for another few minutes.
Add the butter beans, tomatoes and stock. Bring to a simmer, then cover and cook for 10 mins.
Remove rosemary sprigs.
Season to taste and scatter with parsley.
Serve with crusty bread.
PS: Here is the smoked paprika Clemmie used in her recipe. This stuff smells like a dream!
