Clemmie is a creative consultant and busy mother of three. She is also known for her funny and candid instagram account (@clemmie_telford) and her fascinating blog: Mother of all Lists. I visited Clemmie, her husband Ben, and her youngest child, Greta just up the road from my house in Peckham. Clemmie whipped me up her most favourite recipe for an Asian inspired salmon bowl and we discussed everything from my dodgy tastes in popcorn, to the food Clemmie claims is “the single best thing that has happened to me”.

Serves: 4

Ingredients

  • 4 x salmon fillet per person.
  • 2 x microwave rice.
  • 1 bag of kale
  • 1 x cup of edamame
  • For the dressing:
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1-1/2 tablespoons brown sugar or honey
  • 1 tablespoon finely grated ginger
  • 1 tablespoon toasted sesame oil
  • ¼ cup sesame seeds

Instructions

Season your salmon the pan fry it. Approx 4 mins each side.

Meanwhile steam your kale and edamame.

Peel and grate ginger. Combine dressing ingredients.

Microwave rice then serve in a bowl with kale and edamame, and pan fried salmon on top.
