Fritha Quin is a life-long vegetarian and now primarily plant-based eater based in Bristol. Though she claims to be completely useless in the kitchen, she still managed to whip us up her husband’s easy and delicious recipe for vegan mac & cheese. (It was so good I went for thirds!!)

385g flour
250g  cocoa powder
250g baking powder
1 teaspoon of salt
mix dry ingredients
180 ml water
180 ml vegetable oil (essential)
2 teaspoons of vanilla
mix together
put in over for 40 mins (190c)

For icing:
130g sugar
6 tablespoons of corn flour
4 tablespoons of cocoa powder
230ml water
heat for 2 mins of medium heat
½ teaspoon of vanilla
2 tablespoons of oil 

you have yourself a vegan chocolate cake!

Ingredients

  • one head of cauliflower, chopped
  • two medium sized carrots, chopped
  • a handful of cashews (soaked for five minutes in boiling water)
  • 1 teaspoon celery salt
  • 3 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • 1 tablespoon of dijon mustard
  • 1 teaspoon smoked paprika (garnish)
  • a glug of olive oil
  • juice of half a lemon
  • cup of nut milk
  • salt and pepper
  • breadcrumbs
  • 250g macaroni noodles (about 4 cups)

Instructions

preheat oven to 200ºC (400ºF)

cook the macaroni until al dente

boil the cashews, cauliflower and carrots until soft

drain the veg, but retain a mugful of the water

blend the veg together with celery salt, nutritional yeast, garlic powder, onion powder, turmeric, dijon mustard, olive oil, lemon juice, nut milk, and salt and pepper

use the retained cooking water to thin out the mixture

place the cooked macaroni in an oven dish and pour the sauce overtop and mix

top with breadcrumbs and smoked paprika

bake 10-15 minutes until the breadcrumbs are toasty
