Today’s episode brought us back to the English coast to the location of episode one of this podcast in fact, but this time we are interviewing the man of the house instead of the woman! Today’s guest is Simon Hooper who is known to many of you as father of daughters. Simon is a hilariously candid father of four daughters who entertains his nearly one million followers on instagram with funny videos and tales of parenthood. He and I got to talking when I was recording his wife Clemmie and soon made arrangements for me to return so he could make me his famous carrot cake!

Weekend Carrot Cake

  • Cake:
  • 6 fl oz of vegetable oil
  • 6 oz of caster sugar
  • 6 oz of plain flour
  • 3 eggs
  • 2 tsp of vanilla extract
  • 4 oz of walnuts (crushed)
  • 8 oz of carrots (grated)
  • 1tsp baking powder
  • 1 tsp Bi carbonate of soda
  • 1 tsp cinnamon
  • Icing:
  • 6oz soft cream cheese
  • 4oz of room temp butter
  • 2 tsp of lemon juice
  • 8 oz of icing sugar
  • Walnuts to garnish is desired





Pre heat the over to 180c / 350f / gas mark 4


Grease 2 8 inch baking tins and line with grease proof paper


Mix the oil, eggs, sugar ad extract together


Chop the walnuts in to small pieces (put them in a bag and smash the nwith a rolling pin)


Wash and peel the carrots. Then grate them coarsely.


Add the carrots to the mixture. Stir well and finally add the flour and cinnamon. Continue to mix until everything is combined together.


Now divide between the 2 tins and bake for 35 to 40 minutes – just watch they don’t get burnt on top – the cakes should spring back when you touch them




Add the butter to the cream cheese and beat well until combined and there are no lumps of butter left


Add the lemon juice


Spread the icing over the cakes and sandwich the second cake on top of the other


Spread the remaining icing over the top of the cake and decorate with walnuts if that’s your sort of thing.
