Today’s episode brought me to the charming, family friendly neighbourhood of East Dulwich in South London. I know this neighbourhood quite well as I live here too! That’s how I got to meet today’s guest, Vivi Allende. Vivi is a stylist, interior designer and mother of two. She is also an all around fascinating and absolutely adorable woman.

Vivi grew up in Mexico and her homemade huevos rancheros was so good it literally made me cry. I cannot wait to give this a go at home!

Ingredients

  • SALSA:
  • 4 red tomatoes
  • 3 chiles (red indians)
  • 1onions
  • 1 bunch coriander
  • 1 garlic
  • salt
  • GUACAMOLE:
  • 2-3 avocados
  • little piece of onion, minced
  • salt
  • 1 chile (red indians)
  • coriander (if desired)
  • BLACK BEANS:
  • 1 organic black beans tin
  • 1 onion
  • one small or piece of chipotle Chile
  • salt
  • HUEVOS RANCHEROS:
  • corn tortillas
  • eggs (two per person)
  • cheese (mozzarella is the closest to what you can get in Mexico)

Instructions

SALSA:

very roughly chop the ingredients minus the chiles which are left whole

add all ingredients to a pot with a splash of water and let simmer

remove the chiles and cut the tops of and put them back in the mixture before blending

GUACAMOLE:

blend everything or mash with a fork

BLACK BEANS:

add the onion and chipotle chile to the pot with the beans and let cook for 15 minutes

HUEVOS RANCHEROS:

heat the tortillas with vegetable oil

lightly fry the eggs on the hob but leave them undercooked

sprinkle the eggs with the cheese

place the eggs on the tortillas and put them in the oven until eggs are cooked and you can smell the tortilla
